This mouth-watering recipe is from the amazing food expert I found in Google+. She is Shinae Choi Robinson
Lightly Creamy Penne w/ Italian sausage-mushrooms, roasted red peppers
Lunch was this simple pasta for two using:
- I'm guessing about 4 ounces of penne, boiled al dente
- 3 links of hot Italian snausage, casing removed and fried in roughly 2/3" pieces
- 12 crimini mushrooms, sliced and sauteed
- 2 cloves garlic, chopped
- 1/2 a teaspoon dried basil (we didn't have any fresh today)
- 1 teaspoon of olive oil (from the red peppers I packed yesterday)
- 2/3 Tablespoon butter
- 1/3 cup half and half
- maybe a little more than 1/8 teaspoon kosher salt
- a teaspoon of lime juice

Topped with a few strands of the red peppers I roasted and packed in olive oil last night
and a single clove of roasted garlic.
I sweated the garlic in the oil and butter mixture over medium heat until it started to turn translucent,
then added the half and half, basil, salt, and lime juice, turned up the heat to medium high,
and reduced the sauce by about a third before adding the pasta, sausage, and shrooms in.
I could so use a nap about now.
